Two ways with blackcurrant pălincă
Long serve
Wild Berry Mojito
Blackcurrant is the most opinionated berry in the orchard — dark, resinous, faintly wild — and this serve gives it room to speak. Mint, lime and a handful of mixed berries are muddled gently in the glass, then 1½ oz of Pălincă de coacăze and Cocazata currant liqueur are poured straight over them.
Crushed ice and sparkling water lift the whole thing into something long, cold and improbably fresh. It is a summer-evening drink: the sort you nurse through an unhurried conversation rather than finish quickly.

Signature cocktail
Transylvanian Currant Fizz
Where the Mojito is loose and garden-fresh, the Fizz is tailored. Pălincă de coacăze goes into the tin with lemon, honey syrup and a measure of crème de cassis, shaken hard until the berry darkens to a deep ruby, then strained over fresh ice in a stemmed glass.
Sparkling water is added last and stirred only once, so the bubbles stay sharp. Black currants, a lemon twist and mint finish it — an aperitif with backbone rather than a soft berry drink.
