Transylvanian Orchard Buck
Apple and ginger have always belonged together — one sweet and orchard-cool, the other hot and rooted. Two ounces of Pălincă de mere meet fresh lemon, honey syrup and a dash of aromatic bitters in the shaker, chilled only briefly so the fruit keeps its edge.
Strained over ice in a highball and lengthened with cold ginger beer, it drinks crisp and spiced, the apple arriving first and the ginger closing behind it. A fan of apple slices and a sprig of mint make it look exactly as fresh as it tastes.

Signature cocktail
Golden Orchard Spritz
Where the Buck is loud and spiced, the Spritz is quiet and floral. Built — never shaken — over ice in a stemmed glass: an ounce and a half of Pălincă de mere, elderflower liqueur, dry sparkling cider, a splash of tonic and two dashes of bitters to keep the sweetness honest.
One slow stir is enough. Green apple fanned against a sprig of thyme gives it a herbal edge, and the cider carries the orchard note far longer than sparkling water would. An aperitif for a long table and a late afternoon.
