Transylvanian Cherry Spritz
1½ oz of Pălincă de vișine shaken with fresh lemon juice and cherry syrup, strained over fresh ice in a chilled stemmed glass, then topped with sparkling wine and soda water and gently stirred. Fresh sour cherries and a lemon twist finish it.

Transylvanian Cherry Smash
Mint pressed lightly in the shaker, then 1½ oz Pălincă de vișine with lemon, honey syrup, tart cherry juice and aromatic bitters — shaken hard and double strained into a chilled coupe over crushed ice. Cherry and a mint sprig on top.
