Born from a Transylvanian Wine Tradition
The Apold area, in southern Transylvania near Sibiu, sits within a landscape long shaped by vineyards, wine, and the quiet craft of wine distillation. It is a region where cellars, orchards, and oak have coexisted for generations.
It is against this backdrop — and further north, in Medieșu Aurit, where the ZETEA Workshops operate today — that this reserve found its two homes: the place it came from, and the hands that carried it forward.

Chapter II
Dacia Apold — A Name Remembered
The reserve carries forward the character associated with the former Dacia Apold spirit, once known in Romania for wine-based distillates. Its name is not decorative. It is a point of continuity with an earlier chapter of Romanian distilling.
Under ZETEA stewardship, that lineage is neither rewritten nor exaggerated. It is acknowledged, preserved, and given a contemporary presentation shaped by restraint.

Time is not an ornamental detail in this spirit. It is one of its principal makers. More than thirty years of contact with oak allowed the wine distillate to evolve slowly, gaining color, integration, and maturity.

Hors d’Âge is a French term borrowed by the world’s great cellars — Cognac, Armagnac, Calvados — to describe a spirit whose maturation has passed so far beyond ordinary age statements that it can no longer be counted in single years. It is a mark of extreme age and a signal of the master’s hand.
For Ultima Rezervă Dacia Apold, this designation is not a marketing gesture. It is the honest name for what remains unknown.
The Documented
The family holds the archival records of the day the oak casks were sealed and laid down in the cellar at Apold, Sibiu — a date confirmed, dated, kept.
The Unknown
What no document records is the year the wine itself first entered those casks. It may be forty. It may be fifty. Sixty, or more. The exact origin remains a mystery.

What can be affirmed with certainty is a minimum of thirty years in oak. Everything beyond that number belongs to the silence of the cellar.

The entire reserve at Apold amounts to a total of 30,000 litres. Not a production run — the whole of what exists. Once released, no successor vintage can be created. The allocation has been structured in three defined tranches.
