What is țuică?

Țuică is Romania's plum spirit: fermented plums, distilled, bottled, and nothing else. It has been made in Transylvanian villages for centuries, long before it carried a label — a household spirit produced each autumn from the orchard behind the house.

Most țuică sits between 24% and 40% ABV. It is poured as a welcome, an aperitif, and a mark of hospitality. ZETEA's Țuică Zetea de Transilvania is the luxury expression of that tradition, awarded the Silver Medal at the World Contest in Brussels in 2001.

What is pălincă?

Pălincă is the concentrated form of the same craft — distilled twice or, in the ZETEA distillery, three times, and traditionally bottled at 50% ABV. The extra distillation is not about strength for its own sake; it sharpens the fruit and lengthens the finish.

Where țuică means plum, pălincă spans the orchard: plum, pear, apple, sour cherry, grape, quince, apricot, blackcurrant and wild berries each yield a different spirit from the same method.

How Romanian plum brandy is made

Ripe fruit is selected by variety and condition, then fermented slowly so aroma has time to build. Distillation happens in traditional direct-fire copper kettles, where the distiller controls heat and cut points by hand — a tactile process no continuous still reproduces.

Some expressions rest in oak for years; others are bottled bright to preserve their fresh fruit signature. Nothing is added at any stage.

How to drink țuică and pălincă

Lightly chilled, never frozen. A tulip glass concentrates the aroma; a shot glass throws it away. Pour a small measure, let it open for a minute, and taste the fruit before the alcohol.

In the glass it behaves like a fruit-forward eau-de-vie: sip it neat, or build it into cocktails where its orchard character does the work a neutral spirit cannot.

Serve it lightly chilled — around 12–15°C — in a tulip glass so the fruit aroma gathers. Sip it neat before a meal or after it; never freeze it, which mutes the aroma the distiller worked to keep. It also makes an exceptional cocktail base, bringing orchard fruit where vodka brings neutrality.
